Comfort in Baking

It was pouring with rain, and blowing a gale, outside.  My refuge is Baking.
Chelsea Buns. Small versions of Elizabeth David's recipe, with chopped, dried apricots, and almonds. Flavoured with cardamom. 


Pitmaston Pineapple apples, gently arranged on a layer of caremelised sugar, then dotted with butter.
 
 Covered with a layer of chilled pastry, and baked hot.  Allow to stand for ten minutes.
Turn out onto a warm plate. Serve in wedges, with some cold cream - Thick Jesey cream, if you can get it.
